Friends-
I would like to take this moment to introduce myself as I embark on my new adventure as Executive Chef at Great Bay. I am looking forward to a fantastic experience and to bringing my culinary vision to your plate.
The famous Chef Alain Ducasse once said, "The chef doesn't make the ingredients, the ingredients make the chef." This quote epitomizes both my own culinary experience and my personal kitchen philosophy. Since my graduation from The Culinary Institute of America, it has been my great privilege to work in the kitchens of Tabla, Lespinasse, and Oceana in New York City before I moved back home to where my heart truly resides - Boston.
For the last 10 years, Boston has been my home and the place that has provided the ingredients that inform and inspire me as a chef. I am fortunate to have worked across the range of this wonderful city: from Ambrosia to Blu, and my last seven years as executive chef at Lucca and Sasso.
I am greatly looking forward to working at Great Bay. I invite you to join me at the Island Bar and experience new creations such as my shrimp ceviche tostadas and other South American influenced dishes. In the dining room, I'll be offering my own twist to the friendly comfort foods you've come to know and love here at Great Bay. It will be my honor to cook for you!
